Freezer Meals Part 2

Today my post is all about fun. I want to share some of my recipes for my freezer meals in case anyone is interested. I’m going to start with our favorite, Crock Pot Spaghetti!

Ingredients

1 lb Hamburger

½ Onion, diced

Large can of tomato juice

15 oz can diced tomatoes

2 t Italian Seasoning

1 t Salt

1 t Pepper

1 t garlic powder or fresh garlic

Spaghetti Noodles

1. Brown the hamburger until no longer pink. Cook the diced onion with the hamburger. When hamburger is done, drain the grease and put in crock pot.

2. Add the rest of ingredients and stir well.

3. Put crock pot on low and cook for 7-8 hours. If cooking on High, cook for 4 hours.

4. Place the spaghetti noodles in and turn crock pot to high. Stir after 30 minutes and cook for 30 more minutes.

We like to have this with a huge salad and garlic bread! When I put in the freezer, I seperate it into three freezer containers.

Breakfast Burritos

There are a ton of breakfast burritos out there in the land of the internet! I created this simple recipe just using ingredients we love.

Ingredients

6 eggs

Breakfast Meat-you can use diced ham, bacon or Italian Sausage. Any kind of meat you like.

Frozen Hash Browns

2 Cups Shredded Cheddar Cheese

Flour Tortillas

1. Cook the meat that you have chosed. If doing the bacon, crumble it when it is cooked.

2. Scramble the eggs in a skillet. When the eggs are almost done add in the meat and frozen hash browns. I usually add in 1 to 1 ½ cups. Stir together until the hash browns are thawed out. Add half of the cheese and stir.

3. On one flour tortilla, spoon in some of the egg mixture, top with cheese and fold. Set aside.

4. When all the egg mixture is added to the tortilla, let them cool off. Once cool, I place into Ziploc freezer bags, 2-3 in each bag. Then freeze!

5. When we pull them from the freezer to enjoy, once thawed I heat them up and brown the tortillas on my griddle with a small amount of olive oil. Once heated, they are ready to go!

We serve these with fruit or yogurt and we will typically have some salsa to dip them in.
