Freezer Meals

I have been through two surgeries since March, and one thing I prepared for was meals. Yes, my husband cooks, but as he was my primary “helper” while I was recuperating from the surgeries I took stock of my freezer and saw I was sorely lacking in freezer meals. This would be one way to relieve stress for him and me while I was recuperating to pull something from the freezer and heat it up for meals.

There is a lot of information out there on the internet regarding freezer meals, just do a search and you will see what I mean. I stuck with some of my own recipes, as well as favorite cooks I follow. It can be time consuming, but I split it up over several days to prepare and freeze some meals. I made crock-pot spaghetti and separated it into three meals. I think I still have one of them in the freezer! I also made up some pasta meals, and made sure to include favorites and things that would be easy to eat as one of my surgeries was an oral surgery. I also made some breakfast burritos and muffins for quick and easy breakfasts!

Not having the stress of having to fix meals and pull right from the freezer was so convenient. I mostly used my containers I have to freeze them in, I did need some bigger ones. So I bought some aluminum foil containers, and when filled I wrapped them in plastic wrap and then covered with foil. Ziploc bags will also work for some of the meals.

Having the freezer meals worked out great! I am going to make sure to always have some freezer meals in my freezer, and not just for when having surgeries! On busy days, it is great to just pull something and put in the oven until it is hot. Freezer meals won’t be a big focus in emergency prep or climate control for me, but the convenience of having frozen meals available during emergency situations. You may not have time to prepare a meal, but you would have time to pull something out of the freezer and heat them up in the oven.
